A taste of spring

My grandmother always had a huge garden and in that garden was always cucumbers. All spring and summer long in her refrigerator was always refrigerator pickles made from the cucumbers she grew. The days are getting longer and warmer and I was feeling a little homesick so I decided to whip up a little spring. One of my dearest friends gave me her recipe for these years ago and they are delish and well worth the little effort they take.


I prefer the English cukes. There are no seeds and the skin is very tender. The mandolin is a cheapo that I bought at the grocery store and I LOVE it. It works like a dream.
