I had some bananas that I knew would not be eaten so I decided to make some muffins.

I use a potato masher for the bananas.

To keep the muffins fluffy and moist it is important to not over beat the batter.

Here they are hot out of the oven.

Banana Muffins

3 large bananas
3/4 cup white sugar
1 egg
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 1/2 cup all purpose flour
1/3 cup melted butter
1/2 tsp. vanilla extract

Mash bananas. Add sugar, slightly beaten egg and vanilla extract. Add the melted butter. Add the dry ingredients. Bake 375 for 20 minutes. Makes 1 dozen.
